Meatloaf Cupcakes



Ingredients:

For the meatloaf-
1 packet Lipton beefy onion (meatloaf recipe on back of box!)
2 lbs ground beef
1/3 cup Ketchup
2 eggs
3/4 bread crumbs (I like to use 1 cup)
3/4 cup water
Salt and pepper, to taste

4 potatoes, peeled and chopped into chunks
1/4 cup milk
2 tbs butter
1 egg yolk
Salt, to taste

1 icing bag with large icing tip
6 cup muffin pan



Directions:
Preheat oven to 350 degrees.

1. Place potatoes in large pot. Fill pot with cold water, just enough to cover the potatoes. Add about 1 tbs salt and bring to boil. On medium/high heat, boil potatoes for 20-25 minutes, or until soft enough to pierce with fork.

2. Prepare meatloaf. Spray 6 cup muffin pan with non stick cooking spray and fill each cup with meatloaf. Bake in oven for 37 minutes.

3. Once potatoes are boiled, place into electric mixing bowl with milk, butter and salt. Mix on medium/high for 1-2 minutes. Add egg yolk and continue to mix for an additional minute. Mix well until no chunks.

4. Fill mashed potatoes into icing bag. Once meat if fully cooked, ice the meatloaf with the mashed potatoes. Place back into oven on Broil - and broil for 3-4 minutes (watch carefully).


Peas, corn, carrots, gravy or ketchup, and biscuits are all great side ideas to use with this meal! It is very filling! Enjoy!
